Chef Sonia El-Nawal’s recipe for seared shrimp with green beans, red peppers, snow peas in tomato sauce and salad.
6 oz peeled and cleaned shrimp 16 20
4 oz green beans raw cut into 1 inch pieces
3 oz snow peas raw cut on an angle into 3 inch pieces
3 oz red pepper in short strips
½ romaine heart sliced thinly
1 cup crushed tomato
1 garlic clove chopped
1 tsp olive oil
cracked black pepper
In a cast iron skillet, sauté shrimp in olive oil with garlic for 2 to 3 minutes. Add the crushed tomato and let simmer for 8 minutes. Add peppers, snow peas and green beans for 3 minutes, pull off fire, and serve over a bed of romaine.
