Grilled salmon with fresh fennel, kale, cauliflower and onion salad is a great meal for lunch and/or dinner.

Grilled Salmon, fennel, kale cauliflower salad

Ingredients:

  • 6oz salmon filet
  • 3oz sliced kale
  • 1/4 sliced fresh fennel
  • 1cup cut cauliflower
  • 1/8 thinly sliced red onion
  • 1tsp balsamic vinegar
  • 1tsp extra virgin olive oil

In a grill or cast iron pan, sear or grill salmon to desired temperature. In a mixing bowl, mix cauliflower and red onion, drizzle balsamic vinegar and extra virgin olive oil.

Sautee kale quickly in pan. Slice and wash fennel.

Serve salmon and sides on a large place.
