Grilled Lamb Chops & Cucumber Salad


Lamb Chops

  • 1 Rack of Lamb
  • 2 Garlic Cloves (minced)
  • 2 tbs Fresh Rosemary (minced)
  • 2 tbs Fresh Flat Leaf Parsley
  • 2 tbs Avocado Oil
  • 1/2 tbs Red Pepper Flakes
  • Sea Salt (to taste)

Cucumber Salad

  • 2 English Cucumbers (peeled, halved and sliced 1/4)
  • 2 cups Red / Cherry Tomatoes (sliced in half)
  • 1/2 Red Onion (sliced)
  • 1/2 cup of Feta Cheese
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • Sea Salt (to taste)
  • Fresh Ground Black Pepper (to taste)


Cooking Instructions:
Lamb Chops
Pre-heat grill.
Rub the lamb with avocado oil
Combine remaining ingredients and rub all over lamb chops, pressing the mixture into the meat.
Sear, bone side down first, over direct medium heat until lightly browned for 2-4 minutes. Turn once. (Flare-ups may occur.)
Move lamb chops over indirect medium heat of grill.
Let rest for 5 minutes before cutting.

Cucumber Salad
Combine all ingredients and set in the refrigerator until ready to serve.
Can be prepared up to 1-day before. Salad best when served fresh.
