Chicken and vegetables is the most popular healthy dish but can lack flavor. Chef Sonia El-Nawal has a great spin on this bland dish to make it savory.
- 5 oz organic chicken breast
- 1 small tomato quartered
- 3 oz or 1 cup of cauliflower florets
- 3 oz or 1 cup of broccoli florets
- 2 tbs chopped flat parsley
- ¼ baked sweet potato
- 1 tsp olive oil
In a small teflon sauté pan, sauté chicken breast on both sides (4mins each side). Add tomato, parsley and a quarter cup of water. Add both vegetables and let simmer.
Season with black pepper and serve on top of pre baked sweet potato slices.
